Ingredients:
For Roast Garlic Head:
1 Head Garlic
1 tsp Olive Oil
For Bourbon Glaze:
1 tbsp Olive Oil
1 Medium-sized Onion, Chopped
1 Head Garlic (Roasted)
1 tbsp Crushed Pineapple
1 ½ cup Domino Dark Brown Sugar (Recommended)
¼ cup KY Bourbon or Jack Daniels if you please
1 ¼ cup Dole Pineapple Juice (Recommended)
1 tbsp Soy Sauce
¼ cup Kikkoman Teriyaki Sauce (Recommended)
3 tbsp Lemon Juice
3 tbsp Bragg Apple Cider Vinegar (Recommended)
1 tsp Red Wine Vinegar
⅛ tsp Cayenne Pepper
Instructions:
For Roast Garlic Head:
Set the oven to 400 °F (200 °C).
Cut the garlic head in half lengthwise and place both halves on a large piece of foil.
Drizzle the garlic with olive oil and lightly brush it into the garlic cloves before wrapping them in foil. Be sure to wrap the garlic loosely to avoid the cloves touching the foil.
Roast the garlic for about 30–35 minutes.
Remove the roasted garlic from the oven and set it aside.
For Bourbon Glaze:
Heat 1 tbsp of olive oil over medium heat in a saucepan.
Add the finely chopped onion and cook until soft.
Squeeze the roasted garlic cloves into the saucepan and add crushed pineapple, dark brown sugar, Jack Daniels Whiskey, pineapple juice, teriyaki sauce, soy sauce, lemon juice, apple cider vinegar, red wine vinegar, and cayenne pepper.
Bring the mixture to a boil, then reduce the heat and simmer for 12 to 15 minutes or until the mixture has reduced by half.
Remove the saucepan from the heat and let the mixture sit until it thickens.
Pour the bourbon glaze into a glass jar.
