2 lobster tails

Step 1: Preheat the Blackstone griddle Turn on your Blackstone griddle and preheat it to medium-high heat. This will ensure that the griddle is hot enough to cook the lobster tails.

In a separate small bowl, combine mayonnaise, lemon juice, Old Bay seasoning (if using), salt, and pepper. Pour the mixture over the chopped lobster meat and gently toss to coat the meat evenly.
Step 5: Toast the buns While the lobster filling is marinating, lightly toast the split-top hot dog buns on the griddle for a few seconds on each side until they are warm and slightly toasted.
Step 6: Assemble the lobster rolls Place a bed of chopped lettuce or shredded lettuce on each toasted bun (optional). Spoon the lobster filling onto the buns, dividing it evenly.
