Ingredients:

  • 1 pound large shrimp, peeled and deveined

  • 1 bell pepper, thinly sliced

  • 1 onion, thinly sliced

  • 2 tablespoons olive oil

  • 2 cloves garlic, minced

  • 1 tablespoon chili powder

  • 1 teaspoon cumin

  • 1 teaspoon paprika

  • 1/2 teaspoon salt

  • 1/4 teaspoon black pepper

  • Juice of 1 lime

  • Flour tortillas

  • Optional toppings: sour cream, guacamole, salsa, shredded cheese, chopped cilantro

Step 1: Preheat the Blackstone griddle Turn on your Blackstone griddle and preheat it to medium-high heat. This will ensure that the griddle is hot enough to cook the shrimp and vegetables.

Step 2: Prepare the shrimp In a mixing bowl, combine the peeled and deveined shrimp with minced garlic, chili powder, cumin, paprika, salt, black pepper, and a drizzle of olive oil. Toss the shrimp until they are evenly coated with the spices.

Step 3: Cook the shrimp and vegetables Drizzle olive oil on the preheated griddle surface. Squeeze fresh lime juice over the cooked ingredients for an extra burst of flavor. Serve the shrimp and vegetables on warm tortillas and top with optional toppings such as sour cream, guacamole, salsa, shredded cheese, and chopped cilantro.
