Ingredients:

  • 1 1/2 pounds flank steak, thinly sliced

  • 1 bell pepper, thinly sliced

  • 1 onion, thinly sliced

  • 2 tablespoons olive oil

  • 2 cloves garlic, minced

  • 1 tablespoon chili powder

  • 1 teaspoon cumin

  • 1 teaspoon paprika

  • 1/2 teaspoon salt

  • 1/4 teaspoon black pepper

  • Juice of 1 lime

  • Flour tortillas

  • Optional toppings: sour cream, guacamole, salsa, shredded cheese, chopped cilantro

Step 1: Preheat the Blackstone griddle Turn on your Blackstone griddle and preheat it to medium-high heat. This will ensure that the griddle is hot enough to sear the steak and vegetables.

Step 2: Marinate the steak (optional) If desired, you can marinate the thinly sliced flank steak in a mixture of lime juice, olive oil, minced garlic, chili powder, cumin, paprika, salt, and black pepper. Place the steak in a shallow dish, pour the marinade over it, and let it marinate for about 30 minutes to enhance the flavor. However, if you're short on time, you can skip this step.

Step 3: Cook the steak and vegetables Drizzle olive oil on the preheated griddle surface. Add the sliced steak, bell peppers, and onions to the griddle. Cook them for about 5-6 minutes, stirring occasionally, until the steak is cooked to your desired level of doneness and the vegetables are tender-crisp.

Step 4: Warm the tortillas While the steak and vegetables are cooking, you can warm the flour tortillas. You can either place them directly on the griddle for a few seconds on each side until they are warm and slightly charred, or you can wrap them in foil and heat them in a low oven.

Step 5: Assemble the fajitas Once the steak and vegetables are cooked, remove them from the griddle and transfer them to a serving platter. Squeeze fresh lime juice over the cooked ingredients for an extra burst of flavor. Serve the steak and vegetables on warm tortillas and top with optional toppings such as sour cream, guacamole, salsa, shredded cheese, and chopped cilantro.

Step 6: Enjoy! Your delicious steak fajitas are now ready to be enjoyed. Serve them hot and savor the flavorful combination of tender steak, sautéed vegetables, and tasty toppings.

Note: Feel free to customize the fajitas by adding or substituting other vegetables such as mushrooms, zucchini, or jalapeños. You can also serve the fajitas with rice, beans, or a side of Mexican-style corn for a complete meal.
